Ingredients

8 servings
Puff pastry500 g, chilled
Feta cheese1½ cups, crumbled
Ricotta⅔ cup
Egg2 (1 for filling, 1 to brush)
Sesame seeds1 tbsp

Method

4 steps
  1. 1Mash feta, ricotta and one egg together.
  2. 2Roll the pastry 3 mm thick and cut into 10 cm squares. Put a spoon of filling in each and fold into triangles, pressing the edges with a fork.
  3. 3Brush with beaten egg and sprinkle with sesame seeds.
  4. 4Bake at 200°C until puffed and deep golden.
Serve it like this

Serve warm with hard boiled eggs, pickles and grated tomato, the classic Israeli bourekas plate.
