Ingredients

4 servings
Urad dal (split black gram)½ cup, soaked 4 hours
Ginger2.5 cm
Green chilli2
Saltto taste
Mustard oil3 tbsp, for frying and tempering
Fenugreek seeds¼ tsp
Turmeric (ground turmeric)½ tsp
Tomato4 medium, chopped
Lemon juice1½ tbsp
Water2 cups
Coriander leaves (cilantro)a handful

Method

4 steps
  1. 1Grind the soaked urad dal with ginger, one chilli and salt into a thick, fluffy batter.
  2. 2Fry small spoonfuls in hot mustard oil until golden. Drain.
  3. 3In a tablespoon of the oil, add fenugreek seeds, then tomato, turmeric and salt. Cook until the tomatoes collapse.
  4. 4Add water and simmer 5 minutes. Add the bora and lemon juice and simmer 2 minutes. Finish with coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
