Ingredients

4 servings
Cooked rice4 cups cooked rice
Chicken, boneless300 g chicken, thinly sliced
Prawns (shrimp)150 g
Egg4
Bok choy (pak choi)a few leaves, sliced
Carrot1, sliced
Button mushroom100 g, sliced
Onion½, sliced
Garlic3 cloves
Gingerthumb
Oyster sauce2 tbsp
Soy sauce1 tbsp
Cornflour (cornstarch)1 tbsp
Chicken stock (chicken broth)¾ cup
Cooking oil (vegetable oil)2 tbsp

Method

4 steps
  1. 1Fry each egg sunny side up and place one, yolk down, in the bottom of each bowl.
  2. 2Stir fry garlic, ginger, chicken and prawns, then the vegetables, until the chicken is cooked through with no pink.
  3. 3Add stock, oyster sauce, soy and cornflour slurry and simmer until glossy.
  4. 4Spoon the stir fry over the eggs, pack warm rice on top, then flip each bowl onto a plate.
Serve it like this

Turn each bowl out onto a plate so the egg sits on top of the dome, with chilli sauce on the side.
