Indian home style biscuit cake.

Ingredients

6 servings
Tea biscuits (marie biscuits or plain sweet biscuits, rich tea biscuits)2 packets glucose or tea biscuits
Milk1 cup
Sugar3 tbsp, powdered
Cocoa powder (unsweetened cocoa powder)2 tbsp
Baking powder1 tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Cooking oil (vegetable oil)1 tbsp
Cashews2 tbsp, chopped

Method

5 steps
  1. 1Grind the biscuits to a fine powder with the sugar.
  2. 2Whisk in the milk, cocoa and oil to a thick batter. Rest 5 minutes.
  3. 3Heat the oven to 180 C, or preheat a heavy kadai with a stand and lid for 10 minutes.
  4. 4Stir in the baking powder and soda, pour into a greased tin, top with cashews and bake 25 to 30 minutes.
  5. 5Cool 15 minutes before slicing.
Serve it like this

Cut into wedges and serve warm or at room temperature with a cup of milk or chai.
