Classic bhapa pitha.

Ingredients

6 servings
Rice flour2 cups, fresh and slightly moist if you can find it
Waterabout 1/3 cup, sprinkled
Salta pinch
Fresh grated coconut1¼ cups
Nolen gur (date palm jaggery syrup)patali gur, grated

Method

4 steps
  1. 1Sprinkle water and salt over the rice flour and rub until it looks like damp sand.
  2. 2Fill a small bowl halfway with flour, add coconut and gur, cover with more flour and press lightly.
  3. 3Wrap the bowl in a damp muslin, invert onto the cloth over a pot of boiling water and steam 6 to 8 minutes.
  4. 4Lift off and serve hot.
Serve it like this

Serve straight from the steamer on a small plate, gur side up, with a cup of tea.
