Ingredients

Potato4 medium, boiled and mashed
Ginger1.5 cm, grated
Green chilli2, chopped
Cumin powder (ground cumin)1 tsp, roasted
Red chilli powder (indian red chili powder)½ tsp
Coriander leaves (cilantro)2 tbsp
Raisins1 tbsp (optional)
Saltto taste
Besan (chickpea flour, gram flour)1 cup
Rice flour2 tbsp
Turmeric (ground turmeric)a pinch
Kashmiri chilli powder½ tsp
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Water½ cup
Mustard oilfor frying, about 5 tbsp absorbed

Method

4 steps
  1. 1Mix potatoes with ginger, chilli, roasted cumin, chilli powder, coriander, raisins and salt.
  2. 2Shape into flat round chops.
  3. 3Whisk besan, rice flour, turmeric, chilli, soda, salt and water into a thick batter.
  4. 4Heat mustard oil until it smokes, cool slightly, dip chops and fry until golden.
Serve it like this

Serve hot in a paper cone or bowl with muri, sliced onions and green chillies on the side.
