Classic chitoi pitha.

Ingredients

4 servings
Rice1 cup, soaked 4 hours
Waterabout 1 1/3 cups, for grinding
Salta pinch
Fresh grated coconut¼ cup, to serve
Nolen gur (date palm jaggery syrup)½ cup, liquid, to serve

Method

4 steps
  1. 1Drain the soaked rice and grind with water into a smooth, pouring batter. Add salt.
  2. 2Heat a clay chitoi mould or a small appe pan with a lid. Pour batter into each cup.
  3. 3Cover and cook on low heat for 6 to 8 minutes, without flipping.
  4. 4Serve warm with grated coconut and a generous pour of nolen gur.
Serve it like this
