Ingredients

Besan (chickpea flour, gram flour)⅔ cup
Maida (all-purpose flour, plain flour)1 cup
Cooking oil (vegetable oil)2 tbsp in dough, rest for frying
Turmeric (ground turmeric)a pinch
Saltto taste
Waterabout 1/3 cup
Desiccated coconut (unsweetened shredded coconut)½ cup
Sesame seeds3 tbsp
Poppy seeds (white poppy seeds)1 tbsp
Coriander seeds1 tbsp
Fennel seeds1 tsp
Cumin seeds½ tsp
Sugar1 tbsp
Dry mango powder1 tsp
Red chilli powder (indian red chili powder)1 tsp
Garam masala½ tsp
Tamarind1 tsp paste

Method

5 steps
  1. 1Knead besan, maida, 2 tbsp oil, turmeric, salt and water to a stiff dough; rest 20 minutes.
  2. 2Dry roast coconut, sesame, poppy, coriander, fennel and cumin; coarsely grind with sugar, amchur, chilli, garam masala and salt.
  3. 3Roll dough into thin rectangles, brush with tamarind paste and press the masala evenly over.
  4. 4Roll tightly into logs, seal, and cut into 1 cm pinwheels; flatten slightly.
  5. 5Fry on low heat until golden and crisp. Cool completely before storing.
Serve it like this
