Besan (chickpea flour, gram flour)2½ cups, coarse

Milk¼ cup

Ghee¾ cup

Sugar1 cup

Water½ cup

Cardamom½ tsp

Almonds2 tbsp, slivered

Method

4 steps

1Rub 2 tbsp warm ghee and the milk into besan and sieve it.
2Roast the besan in the remaining ghee on low heat until golden and fragrant.
3Boil sugar and water to a one and a half string syrup.
4Pour the syrup into the besan, stir fast, add cardamom and spread in a greased tray. Top with almonds and cut when set.

Serve it like this

Stack squares on a brass plate and serve with tea, or pack in a box for gifting.
