Thin coconut milk⅔ cup

Spring onion (green onion, scallion)2, sliced

Moong sprouts (mung bean sprouts)2 cups bean sprouts
Moong dal (split yellow mung beans)3 tbsp, soaked and steamed
Cooking oil (vegetable oil)3 tbsp, for frying

- 1Whisk rice flour, turmeric, coconut milk, water, salt and spring onion into a thin batter. Rest 30 minutes.
- 2Heat a little oil in a wide pan. Fry a few pork slices, prawns and onion until the pork is cooked through.
- 3Pour in a ladle of batter and swirl to cover the pan. It should sizzle loudly. Scatter mung dal and sprouts on one half, cover 1 minute.
- 4Uncover and cook until the bottom is golden and crisp. Fold in half and slide out.
- 5Make nuoc cham. Wrap pieces of crepe in lettuce with herbs and dip.
Serve it like thisServe each crepe folded on a plate with a big basket of lettuce and herbs and small bowls of nuoc cham. Eat with your hands.
