Rajma, dry (dried red kidney beans)1 cup dry red beans, soaked
Cooked rice4 cups
Beef300 g mince
Pork belly250 g, for chicharrón
Chorizo3 small sausages
Egg6
Ripe plantain (ripe nendran banana)2, sliced
Avocado1, sliced
Arepa flour1 cup, for small arepas
Cooking oil (vegetable oil)for frying
Onion1, for hogao
Tomato2, for hogao
Garlic3 cloves
Cumin powder (ground cumin)½ tsp

- 1Cook onion, tomato and garlic in a little oil into hogao sauce.
- 2Pressure cook soaked beans for 5 whistles, let pressure release naturally, then simmer with half the hogao.
- 3Cook the mince with remaining hogao, cumin and salt until dry.
- 4Boil the pork belly in salted water 20 minutes, then fry in its own rendering until crackling.
- 5Fry chorizo, plantain slices and eggs. Make and griddle small arepas.
- 6Arrange everything on large plates with rice, avocado and an arepa.
