Ingredients

6 servings
Fresh grated coconut1 coconut, grated
Water1 litre, hot
Rice2 cups
Sugar2 tbsp
Raisins¼ cup, optional
Saltto taste

Method

4 steps
  1. 1Blend the coconut with the hot water and squeeze through a cloth to get coconut milk.
  2. 2Boil 1 cup of the milk in a heavy pot until the oil separates and the solids fry dark brown, about 20 minutes.
  3. 3Add the remaining milk, sugar, salt and raisins and bring to a boil. Add the rice.
  4. 4Cook until the liquid sinks to the rice, then cover and cook on very low heat 20 minutes.
Serve it like this

Mound the rice beside a whole fried fish with patacones and a tomato and onion salad.
