Ingredients

4 servings
Carrot1 large, diced
Green beans12, chopped
Cauliflower1½ cups florets
Green peas½ cup
Sweet corn kernels (corn kernels)⅓ cup
Capsicum (green capsicum, green bell pepper)½, diced
Butter3 tbsp
Maida (all-purpose flour, plain flour)3½ tbsp
Milk2 cups, warm
Processed cheese (american cheese)1 cup, grated
Breadcrumbs3 tbsp
Black pepper½ tsp
Dried mixed herbs (italian seasoning)1 tsp
Dried red chillia pinch of flakes
Saltto taste

Method

4 steps
  1. 1Blanch carrot, beans, cauliflower and peas for 3 minutes. Drain.
  2. 2Melt butter, stir in maida for a minute, then whisk in milk until thick. Add half the cheese, pepper, herbs and salt.
  3. 3Fold in all vegetables and pour into a greased baking dish.
  4. 4Top with remaining cheese and breadcrumbs and bake at 200 C for 20 minutes.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
