Arroz a la cubana, Spanish home style.

Ingredients

4 servings
Rice1½ cups long grain rice
Olive oil3 tbsp, divided
Onion1 small onion, finely chopped
Garlic2 cloves
Tomato puree400 g passata
Sugar1 tsp
Saltto taste
Egg4 eggs
Banana2 bananas, halved lengthways

Method

5 steps
  1. 1Cook the rice in salted water with a drizzle of oil until fluffy, then drain.
  2. 2Soften the onion and garlic in a tablespoon of oil, add the passata, sugar and salt and simmer into tomate frito.
  3. 3Fry the banana halves in a little oil until golden on both sides.
  4. 4Fry the eggs in the remaining oil, spooning oil over the whites.
  5. 5Pack the rice into a cup and turn out on each plate. Add sauce, an egg and banana.
Serve it like this

Turn a dome of rice onto the plate, flood one side with tomato sauce, lay the egg on top and the banana alongside.
