Ingredients

4 servings
Tomato1 kg ripe tomatoes
White bread4 slices stale rustic bread
Garlic1 to 2 cloves
Olive oil½ cup
Vinegar2 tsp sherry vinegar
Saltto taste
Egg2, boiled, chopped
Cooked hama few slices jamón, chopped

Method

4 steps
  1. 1Blend the tomatoes with garlic and salt until completely smooth. Strain.
  2. 2Tear in the bread, soak 10 minutes and blend again.
  3. 3With the blender running, drizzle in the oil, then the vinegar.
  4. 4Chill well. Serve topped with chopped egg, jamón and a drizzle of oil.
Serve it like this

Serve chilled in wide bowls, topped with chopped egg and jamón and a swirl of olive oil. Bread sticks alongside.
