Ingredients

4 servings
Arepa flour2 cups yellow arepa flour
Water1⅓ cups, warm
Salt1 tsp
Sugar1 tsp
Egg4
Cooking oil (vegetable oil)for frying, about 7 tbsp absorbed

Method

5 steps
  1. 1Mix arepa flour, salt, sugar and water to a soft dough. Rest 5 minutes.
  2. 2Shape into 4 balls and flatten into 12 cm discs about 5 mm thick.
  3. 3Fry at 170°C for 3 minutes until they puff. Drain.
  4. 4Cut a small slit, slide in an egg from a cup, then seal with a little dough.
  5. 5Fry again for 3 to 4 minutes until golden and the egg is set.
Serve it like this

Serve hot on a napkin, split open at the table, with spicy suero or hot sauce and a cold juice.
