Classic akara.

Ingredients

4 servings
Lobia, dry (dried black eyed peas)1¼ cups, soaked and skinned
Onion½ onion, finely chopped
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)½, minced
Saltto taste
Cooking oil (vegetable oil)for deep frying (about 5 tbsp absorbed)

Method

4 steps
  1. 1Peel the soaked beans by rubbing and floating off the skins.
  2. 2Blend with very little water to a thick, smooth paste. Whisk hard for 3 minutes.
  3. 3Fold in onion, chilli and salt just before frying.
  4. 4Drop spoonfuls into hot oil and fry, turning, until deep golden.
Serve it like this

Pile in a bowl and serve hot with pap (ogi) or a soft roll split open and stuffed with akara.
