Ingredients

8 servings
Zucchini (courgette, baby marrow)2 zucchini, grated
Carrot1 carrot, grated
Onion1 small onion, finely chopped
Bacon (streaky rashers, streaky bacon)3 rashers, diced
Cheddar cheese1¼ cups grated
Maida (all-purpose flour, plain flour)1 cup plain flour
Baking powder1 tsp
Egg5 eggs
Cooking oil (vegetable oil)3 tbsp
Salt½ tsp

Method

5 steps
  1. 1Heat the oven to 180C and line a 20 x 30 cm tin. Squeeze the grated zucchini dry in a cloth.
  2. 2Fry the bacon and onion until the onion softens.
  3. 3Whisk the eggs and oil, then stir in the flour, baking powder and salt.
  4. 4Fold in the zucchini, carrot, bacon, onion and most of the cheese. Pour into the tin and top with the rest.
  5. 5Bake until set and golden, then cool for 10 minutes before slicing.
Serve it like this

Cut into squares and serve warm with tomato relish, or pack cold in lunchboxes with fruit.
