Ingredients

5 servings
Adzuki beans1 cup
Waterabout 5 cups, plus 55 ml for dumplings
Sugar¾ cup
Salta pinch
Glutinous rice flour (sweet rice flour)¾ cup

Method

4 steps
  1. 1Boil the beans in water for 5 minutes, drain and refill with fresh water.
  2. 2Simmer the beans for 60 minutes until soft enough to crush with your fingers, topping up the water.
  3. 3Add the sugar in two batches and the salt and simmer 10 minutes.
  4. 4Make shiratama dumplings from the flour and water, boil until floating and add to bowls of hot zenzai.
Serve it like this

Ladle into small lacquer or ceramic bowls with two or three mochi balls and a small dish of salted pickles to cleanse the palate.
