Ingredients

6 servings
Beef800 g chuck, in chunks
Orzo pasta (risoni)2 cups
Onion1 large, chopped
Garlic3 cloves
Tomato4, grated, or a tin
Tomato puree2 tbsp paste
Whole spices1 cinnamon stick, 2 allspice, bay
Olive oil3½ tbsp
Beef stock (beef broth)5 cups, hot
Parmesan½ cup kefalotyri or parmesan
Saltto taste
Black pepper½ tsp

Method

5 steps
  1. 1Brown the beef in oil, then add onion and garlic.
  2. 2Add tomato, paste, spices and 2 cups stock. Simmer covered 75 minutes until tender.
  3. 3Transfer to a baking dish, add orzo and remaining hot stock.
  4. 4Bake at 180°C for 30 minutes, stirring once, until orzo is tender.
  5. 5Top with grated cheese and rest 5 minutes.
Serve it like this

Spoon into shallow bowls straight from the clay pot, with extra cheese and a Greek salad.
