Mutton (goat meat)600 g on the bone
Water8 cups

Whole spices1 cinnamon stick, 2 bay leaves, 1 black cardamom

Maida (all-purpose flour, plain flour)2½ cups
Instant dry yeast½ tsp
Sweet potato glass noodles (glass noodles, cellophane noodles)a small bundle, soaked
Dried wood ear mushroom (dried black fungus)a few, soaked and sliced
Spring onion (green onion, scallion)3 stalks
Coriander leaves (cilantro)a handful
Garlicpickled or raw, 6 cloves, to serve
Chinese chilli oil2 tbsp, to serveMethod
- 1Blanch the mutton, rinse, then simmer with fresh water, ginger and spices for 2 hours, skimming.
- 2Make a firm dough with the flour, yeast and 150 ml water, shape thin rounds and dry fry them until cooked but pale.
- 3Tear the breads into pieces the size of a fingernail.
- 4Bring the strained broth to a boil, add sliced mutton, glass noodles, wood ear and the bread and cook 2 minutes. Season.
- 5Serve topped with spring onion and coriander, with pickled garlic and chilli oil on the side.
Serve it like thisServe in a large bowl, mutton slices on top, with small dishes of pickled garlic and chilli oil for each person.
