Classic xalwo.

Ingredients

12 servings
Sugar2 cups
Cornflour (cornstarch)1 cup
Water3⅓ cups
Ghee½ cup
Cardamom2 tsp
Nutmega pinch
Saffrona pinch, optional

Method

4 steps
  1. 1Caramelise a third of the sugar in a heavy pot until deep amber, then carefully add a little water.
  2. 2Whisk the cornflour into the rest of the water until smooth, then pour it into the pot with the remaining sugar.
  3. 3Cook on medium, stirring constantly, adding the ghee a spoon at a time, for 40 to 50 minutes.
  4. 4Add cardamom, nutmeg and saffron, pour into a greased tray and cool before cutting.
Serve it like this

Cut into small diamonds and arrange on a plate, served with Somali tea or coffee.
