Ingredients

4 servings
White bread4 thick slices, sourdough or farmhouse
Butter1½ tbsp
Maida (all-purpose flour, plain flour)1½ tbsp
Milk⅓ cup, or ale
Cheddar cheese2 cups, grated, mature
Prepared mustard2 tsp English mustard
Red chilli powder (indian red chili powder)a pinch, as cayenne
Black peppera pinch

Method

4 steps
  1. 1Toast the bread on both sides.
  2. 2Melt butter, stir in flour, add milk and simmer until thick.
  3. 3Off heat, stir in cheese, mustard, cayenne and pepper until thick and spreadable.
  4. 4Spread thickly on toast and grill until bubbling and spotted brown.
Serve it like this
