Ingredients

Pork500 g, in large pieces
Waterfor boiling
Onion1 large, thinly sliced
Green chilli5, roasted
Dried red chilli2, roasted
Ginger4 cm, chopped
Garlic4 cloves, chopped
Coriander leaves (cilantro)a big handful
Lemon juice2 tsp
Saltto taste

Method

4 steps
  1. 1Boil the pork in salted water until tender.
  2. 2Grill or char the pork pieces over a flame or on a hot pan until edges blacken. Slice thin.
  3. 3Roast the chillies over a flame and crush with ginger, garlic and salt.
  4. 4Toss the pork with the chilli paste, onion, coriander and lemon juice.
Serve it like this
