Ingredients

Maida (all-purpose flour, plain flour)1½ cups
Sugar1 cup
Cocoa powder (unsweetened cocoa powder)⅓ cup
Baking soda (bicarb soda, bicarbonate of soda)1 tsp
Salt½ tsp
Cooking oil (vegetable oil)⅓ cup neutral oil
Vinegar1 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Water1 cup, cold
Dark chocolate (bittersweet chocolate)80 g, for the glaze
Thick coconut milk¼ cup, for the glaze

Method

5 steps
  1. 1Heat the oven to 180°C and line or grease a 20 cm square tin.
  2. 2Whisk the flour, sugar, cocoa, baking soda and salt in a bowl, or right in the tin as the old recipe says.
  3. 3Make three wells. Pour oil in one, vinegar in one, vanilla in the third. Pour the water over everything and mix just until smooth.
  4. 4Bake until a skewer comes out with a few moist crumbs. Cool in the tin.
  5. 5For the glaze, warm the coconut milk, pour over the chopped chocolate, stir until smooth and spread over the cooled cake.
Serve it like this

Cut into squares straight from the tin, serve slightly warm with berries or a scoop of nice cream.
