Ingredients

4 servings
Okra (lady's finger)15, cut in 2 inch pieces
Water2 cups thick rice washing water
Shallots10, halved
Garlic10 cloves
Green chilli3, slit
Tamarinda small ball
Sesame oil2 tbsp
Mustard seeds½ tsp
Fenugreek seeds¼ tsp
Curry leavesa sprig
Turmeric (ground turmeric)a pinch
Saltto taste

Method

4 steps
  1. 1Save the second wash of rice; it should be milky. Soak tamarind in it and squeeze out.
  2. 2Heat sesame oil, splutter mustard and fenugreek, add curry leaves, shallots, garlic and chillies and fry until soft.
  3. 3Add okra and saute until it stops being sticky.
  4. 4Pour in the tamarind rice water with turmeric and salt and simmer until thick.
Serve it like this

Serve in a bowl with hot rice, a spoon of sesame oil and a dry poriyal.
