Ingredients

4 servings
Potato4, boiled and cubed
Egg4, hard boiled
Besan (chickpea flour, gram flour)1 cup, for bhajia
Raw mango (green mango)1 small green mango, sliced
Tamarinda small ball, soaked
Lemon juice2 tbsp
Turmeric (ground turmeric)1 tsp
Maida (all-purpose flour, plain flour)3 tbsp, to thicken
Garlic3 cloves
Gingerthumb
Red chilli powder (indian red chili powder)chilli sauce, to taste
Coriander leaves (cilantro)a handful
Cooking oil (vegetable oil)for frying bhajia (about 40 ml absorbed)
Water4 cups

Method

4 steps
  1. 1Simmer water with turmeric, mango, garlic, ginger, tamarind and salt for 15 minutes.
  2. 2Whisk the flour into a little cold water, stir into the broth and simmer until lightly thickened. Add lemon.
  3. 3Make a thick besan batter with salt and chilli and fry small bhajia until crisp.
  4. 4Fill bowls with potatoes, egg halves and bhajia and ladle the hot soup over. Add chilli sauce and coriander.
Serve it like this

Layer the bowl with potatoes, eggs and bhajia, pour the yellow soup over and top with chilli sauce, coriander and cassava crisps.
