Ingredients

Egg4
Tomato puree1⅔ cups passata or crushed tomatoes
Garlic3 cloves, sliced
Dried red chilli2, crushed
Olive oil2 tbsp
Basil leavesa few leaves
Parmesangrated, to finish
Saltto taste
Whole wheat bread (wholemeal bread)crusty bread

Method

4 steps
  1. 1Warm olive oil with the garlic and chilli over low heat until the garlic is pale gold.
  2. 2Add the tomatoes and salt and simmer 10 minutes until slightly thick.
  3. 3Make four wells and crack in the eggs. Cover and simmer gently 5 to 6 minutes.
  4. 4Scatter torn basil and parmesan and serve from the pan with bread.
Serve it like this

Bring the pan to the table on a trivet, basil scattered over, bread piled alongside. Everyone scoops straight from the pan.
