Focaccia genovese.

Ingredients

Maida (all-purpose flour, plain flour)4 cups
Water1½ cups
Instant dry yeast1½ tsp
Salt2 tsp, plus flaky salt
Olive oil⅓ cup, divided
Sugar1 tsp

Method

4 steps
  1. 1Mix flour, water, yeast, sugar, salt and 2 tbsp oil into a soft dough. Rise 1 hour.
  2. 2Stretch into a well oiled tray and rest 30 minutes, then stretch again to the corners.
  3. 3Press deep dimples with oiled fingers. Pour over an emulsion of 3 tbsp oil and 3 tbsp water, then sprinkle salt. Rise 45 minutes.
  4. 4Bake at 230C for 18 to 20 minutes until deep golden.
Serve it like this

Cut into squares and serve warm, oily side up, on a board with soup, cheese or salads.
