Classic tutti frutti cake.

Ingredients

10 servings
Maida (all-purpose flour, plain flour)1½ cups
Sugar⅔ cup, powdered
Curd (plain yogurt, natural yoghurt)½ cup
Cooking oil (vegetable oil)6 tbsp
Milk½ cup
Baking powder1¼ tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Salta pinch
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Tutti frutti (glacé fruit, candied fruit)½ cup plus extra for the top

Method

5 steps
  1. 1Heat the oven to 170 C and line a loaf tin. Whisk curd and sugar until the sugar dissolves, then add the soda.
  2. 2Whisk in the oil, milk and vanilla.
  3. 3Toss the tutti frutti with a spoon of maida. Fold the rest of the maida, baking powder and salt into the wet mix.
  4. 4Fold in the tutti frutti, pour into the tin and scatter a few more on top.
  5. 5Bake 40 to 45 minutes. Cool fully before slicing.
Serve it like this

Cut thick slices and serve on a plate with chai, or wrap single slices for school tiffin.
