Ingredients

3 servings
Potato3 medium, long ones
Cooking oil (vegetable oil)for frying, about 60 g absorbed
Parmesan2 tbsp, finely grated
Paprika1 tsp
Salt¾ tsp
Sugar1 tsp

Method

5 steps
  1. 1Push a long skewer through each potato lengthwise.
  2. 2Cut a continuous spiral by turning the potato against a knife held at an angle, then fan it out along the skewer.
  3. 3Soak 10 minutes, then dry well.
  4. 4Fry at 165 C for 5 minutes, then at 180 C for 2 minutes.
  5. 5Dust with parmesan, paprika, salt and sugar while hot.
Serve it like this

Serve upright on its stick, dusted with cheese and paprika, with ketchup in a little cup.
