Jowar flour (sorghum flour)¾ cup
Bajra flour (pearl millet flour)⅓ cup
Whole wheat flour (wholemeal atta flour, chapati flour)¼ cup
Rice flour3 tbsp
Besan (chickpea flour, gram flour)¼ cup
Onion1 medium, finely chopped
Coriander leaves (cilantro)a handful, chopped
Green chilli2, chopped
Cumin seeds1 tsp
Coriander powder (ground coriander)1½ tsp
Red chilli powder (indian red chili powder)1 tsp
Turmeric (ground turmeric)½ tsp
Sesame seeds1 tbsp
Ajwain (carom seeds)a pinch
Saltto taste
Cooking oil (vegetable oil)about 3 tbsp, for the tawa
Butter2 tbsp, white butter to serveMethod
- 1Mix all the flours, onion, coriander, chilli, spices, sesame, ajwain and salt. Add water little by little and knead a soft dough.
- 2Grease a cool tawa or a sheet of banana leaf or plastic. Pat a ball of dough out thin with wet fingers into a round.
- 3Poke 4 or 5 holes in the round and pour a few drops of oil into each hole and around the edge.
- 4Cook covered on medium heat, then flip and cook the other side open.
- 5Serve hot with white butter and curd or thecha.
