Ingredients

4 servings
Carrot3, grated
Peanuts¼ cup, roasted and coarsely crushed
Lemon juice1 tbsp
Sugar1 tsp
Green chilli1, finely chopped
Coriander leaves (cilantro)a handful
Salt½ tsp
Cooking oil (vegetable oil)1 tsp
Mustard seeds½ tsp
Asafoetidaa pinch
Curry leavesa few

Method

3 steps
  1. 1Grate the carrots finely and put in a bowl.
  2. 2Add peanuts, chilli, coriander, sugar and lemon.
  3. 3Temper mustard seeds, asafoetida and curry leaves in hot oil and pour over. Add salt just before serving.
Serve it like this

Serve a small mound on the left of a Maharashtrian thali, or in a small katori beside rice and varan.
