Ingredients

4 servings
Wheat noodles4 portions ramen noodles
Minced pork (pork mince, ground pork)200 g
Doubanjiang1 tbsp plus 1 tsp
Sweet bean sauce1 tbsp
Garlic2 cloves
Ginger2 tsp
Chinese sesame paste¼ cup
Chicken stock (chicken broth)5 cups
Soy sauce2 tbsp
Chinese chilli oilrayu, to taste
Bok choy (pak choi)4 small, halved
Spring onion (green onion, scallion)chopped
Cooking oil (vegetable oil)2 tsp
Sugar1 tsp
Rice vinegar2 tsp

Method

5 steps
  1. 1Fry pork in oil until crisp, add garlic, ginger, doubanjiang and sweet bean sauce and fry until fragrant.
  2. 2Whisk sesame paste, soy, sugar, vinegar and chilli oil in each bowl.
  3. 3Heat stock to a simmer and blanch the bok choy in it.
  4. 4Cook noodles, then pour hot stock into the bowls and whisk into the sesame base.
  5. 5Add noodles, pork, bok choy and spring onion.
Serve it like this

Serve in a deep ramen bowl with pork piled in the centre, bok choy at the side and chilli oil on the table.
