Ingredients

Sweet corn kernels (corn kernels)4 cobs, husked
Mayonnaise3 tbsp
Hung curd (greek yogurt)3 tbsp
Kashmiri chilli powder1 tsp
Garam masala¼ tsp
Ginger garlic paste1 tsp
Butter1½ tbsp, melted
Queso fresco½ cup, finely crumbled
Chaat masala1 tsp
Lemon1 lime, in wedges
Coriander leaves (cilantro)a few sprigs, chopped
Salta pinch

Method

5 steps
  1. 1Roast the corn directly over a gas flame on medium heat for 8 to 10 minutes, turning often.
  2. 2Mix mayonnaise, hung curd, Kashmiri chilli, garam masala, ginger garlic paste and salt.
  3. 3Brush the hot corn with butter, then coat thickly with the tandoori mayo.
  4. 4Roll in queso fresco and dust with chaat masala and coriander.
  5. 5Rub with lime and serve hot.
Serve it like this

Halve each cob and stand the pieces upright on a slate. Dust extra chaat masala around the plate and add lime wedges and a few coriander leaves.
