Ingredients

2 servings
Egg5
Mayonnaise3 tbsp, Japanese style
Milk2 tsp
Sugar½ tsp
Salta pinch
White peppera pinch
White bread4 thick slices, milk bread
Butter2 tsp, soft

Method

4 steps
  1. 1Boil 4 eggs for 10 minutes and the 5th for 7 minutes, then plunge all into ice water.
  2. 2Peel and mash the eggs with a fork, leaving some bits of white. Mix in mayonnaise, milk, sugar, salt and pepper.
  3. 3Butter the bread thinly and pile the egg mix thickly onto two slices. Top, press gently and chill 10 minutes.
  4. 4Trim the crusts and cut each sandwich in half with a sharp knife, wiping between cuts.
Serve it like this

Stand the halves cut side up to show the filling, on a small plate or in a lunchbox lined with paper. Cold milk tea alongside.
