Ingredients

4 servings
Paneer400 g fresh paneer or chhena, finely crumbled (tvorog if you can get it)
Egg1
Maida (all-purpose flour, plain flour)½ cup, plus extra for dusting
Sugar2½ tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Salta pinch
Cooking oil (vegetable oil)2 tbsp, or butter
Sour cream½ cup, to serve
Fruit jam (jam or preserves)2 tbsp, to serve

Method

5 steps
  1. 1Mash the paneer with a fork or press through a sieve until smooth and crumbly with no lumps.
  2. 2Mix in the egg, sugar, vanilla, salt and most of the flour to a soft dough.
  3. 3Shape into 12 small patties, about 1.5 cm thick, and dust with flour.
  4. 4Fry in oil on medium low heat until golden on both sides and cooked through.
  5. 5Serve warm with sour cream and jam.
Serve it like this

Stack three syrniki on a warm plate with a dollop of sour cream and a spoon of jam, and dust with powdered sugar.
