Ingredients

Sweet potato1 large, steamed and mashed
Dark chocolate (bittersweet chocolate)100 g, chopped
Butter3 tbsp
Cocoa powder (unsweetened cocoa powder)¼ cup
Whole wheat flour (wholemeal atta flour, chapati flour)½ cup
Egg2 eggs
Brown sugar⅓ cup
Baking powder½ tsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Salta pinch

Method

4 steps
  1. 1Heat the oven to 180 C and line a 20 cm square tin. Melt the chocolate and butter together over low heat.
  2. 2Whisk the eggs, brown sugar and vanilla until a little foamy, then beat in the mashed sweet potato and the chocolate.
  3. 3Fold in the flour, cocoa, baking powder and salt.
  4. 4Bake 22 to 25 minutes. Cool completely in the tin, then cut into 16 squares.
Serve it like this

Cut into small squares, stack them in a pyramid on a board and dust a little cocoa over the top.
