Ingredients

6 servings
Condensed milk (sweetened condensed milk)1 tin
Evaporated milk1 can
Egg4, separated
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Sugar¾ cup, for meringue
Water¼ cup
Cinnamonto dust

Method

4 steps
  1. 1Cook condensed and evaporated milk together on low, stirring constantly, until thick and caramel coloured.
  2. 2Off heat, whisk in the yolks quickly and vanilla, then cook 1 minute more. Pour into glasses and cool.
  3. 3Boil sugar and water to soft ball stage, then pour in a thin stream into stiffly beaten whites, beating constantly.
  4. 4Pipe meringue over the custard and dust with cinnamon. Chill.
Serve it like this

Serve in small glasses so the caramel and white layers show, a dusting of cinnamon on top, chilled.
