Classic Surti ghari.

Per serving, worked out from the ingredient table.

Ingredients

8 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Ghee2 tbsp for dough, the rest for frying and coating
Water⅓ cup
Khoa¾ cup
Sugar60 g for filling, 40 g for coating
Almonds2 tbsp, powdered
Pistachios2 tbsp, powdered
Cardamom½ tsp
Saffrona few strands

Method

5 steps
  1. 1Knead maida with 2 tbsp ghee and water into a soft dough. Rest 20 minutes.
  2. 2Roast khoa until light golden. Cool and mix with 60 g sugar, nuts, cardamom and saffron. Shape into flat discs.
  3. 3Roll small puris, wrap each disc and pleat closed like a pouch, flattening the base.
  4. 4Fry on low heat until pale golden. Cool fully.
  5. 5Whip the remaining ghee with 40 g powdered sugar until fluffy. Dip each ghari in it and chill to set.
Serve it like this

Serve chilled, one ghari per person on a small plate, cut in half to show the filling.
