Ingredients

4 servings
Strawberriesabout 3 cups
Sugar¼ cup, divided
Lemon juice2 tsp
Fresh cream (thickened cream, heavy cream)1 cup, well chilled
Hung curd (greek yogurt)½ cup
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp

Method

5 steps
  1. 1Hull the strawberries. Chop half into small pieces; crush or blend the rest with half the sugar and the lemon juice.
  2. 2Leave the purée for 10 minutes.
  3. 3Whip the cream with the remaining sugar and vanilla to soft peaks, then fold in the hung curd.
  4. 4Fold in most of the purée and the chopped berries in just two or three strokes so it stays streaky.
  5. 5Spoon into glasses, top with the remaining purée and chill 20 minutes or serve at once.
Serve it like this

Serve in clear glasses so the ripples show, with a halved strawberry and a crisp biscuit on the side.
