Ingredients

4 servings
Beef4 entrecôte or sirloin steaks, 200 g each
Potato4 large, in 1 cm batons
Cooking oil (vegetable oil)for frying, about 70 g absorbed
Butter4 tbsp, soft
Flat leaf parsley2 tbsp, chopped
Shallots1, minced
Lemon juice1 tsp
Saltto taste
Black peppercracked

Method

5 steps
  1. 1Mix butter with parsley, shallot, lemon and pepper. Roll in cling film and chill.
  2. 2Soak potato batons 30 minutes, dry well. Fry at 150°C for 6 minutes. Drain.
  3. 3Season steaks generously. Sear in a smoking pan 3 minutes a side for medium rare.
  4. 4Rest the steaks 5 minutes. Meanwhile fry the potatoes again at 185°C until crisp.
  5. 5Salt the fries and serve with steak topped with butter.
Serve it like this

Plate the steak with butter melting on top, a tall pile of fries and a green salad on the side.
