Ingredients

4 servings
Maida (all-purpose flour, plain flour)1⅔ cups plain flour
Baking powder2 tsp
Salt½ tsp
Egg2 eggs
Milk1¼ cups
Butter4 tbsp, melted
Spinach2 handfuls, finely chopped
Cheddar cheese¾ cup grated
Black peppera pinch

Method

4 steps
  1. 1Whisk the flour, baking powder, salt and pepper in a bowl. In another, whisk the eggs, milk and melted butter.
  2. 2Fold the wet into the dry, then fold in the spinach and cheese. Leave a few lumps.
  3. 3Heat and grease the waffle iron. Fill, close and cook until the steam stops.
  4. 4Cool on a rack for a minute, then cut into quarters.
Serve it like this

Cut into quarters and serve with a spoon of yoghurt or ketchup for dipping. Freeze extras and reheat in the toaster.
