Ingredients

4 servings
Basmati rice1¼ cups, soaked 20 minutes
Soya chunks1 cup, soaked and squeezed
Onion1 medium, sliced
Tomato1 small, chopped
Green peas⅓ cup
Carrot1 small, cubed
Ginger garlic paste2 tsp
Whole spices1 bay leaf, 4 cloves, 2 cardamom, cinnamon
Cumin seeds½ tsp
Cooking oil (vegetable oil)2 tbsp
Garam masala¾ tsp
Red chilli powder (indian red chili powder)½ tsp
Mint leavesa handful
Salt1½ tsp
Water2⅓ cups

Method

4 steps
  1. 1Soak soya chunks in hot salted water 10 minutes, then squeeze out completely.
  2. 2Heat oil in the cooker, fry whole spices, cumin and onion till golden, then ginger garlic paste and tomato.
  3. 3Add soya, vegetables, spices and mint and stir 2 minutes. Add rice, salt and water. Pressure cook for 1 whistle on medium. Let the pressure release naturally.
  4. 4Fluff and rest 5 minutes.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
