Ingredients

3 servings
Soya chunks1½ cups
Coconut oil2 tbsp
Fennel seeds½ tsp
Curry leaves2 sprigs
Onion1 large, sliced
Ginger garlic paste2 tsp
Green chilli1, slit
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)¾ tsp
Coriander powder (ground coriander)1½ tsp
Black pepper1¼ tsp, freshly crushed
Garam masala½ tsp
Lemon juice2 tsp
Saltto taste

Method

5 steps
  1. 1Boil soya chunks in salted water 5 minutes, squeeze dry and halve.
  2. 2Heat coconut oil, add fennel and curry leaves, then onion until golden.
  3. 3Add ginger garlic paste, chilli and powdered spices for a minute.
  4. 4Add soya and roast on medium high for 8 to 10 minutes, stirring, until dry and browned.
  5. 5Finish with pepper, garam masala and lemon.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
