Ingredients

4 servings
Fish500 g fish steaks (rohu, surmai or pomfret)
Onion2 medium, chopped
Tomato3 medium, chopped
Garlic8 cloves, crushed
Ginger2.5 cm, grated
Green chilli2, chopped
Coriander leaves (cilantro)1 bunch, chopped
Cooking oil (vegetable oil)3 tbsp
Turmeric (ground turmeric)¾ tsp
Red chilli powder (indian red chili powder)1½ tsp
Coriander powder (ground coriander)1½ tsp
Dry mango powder¾ tsp
Lemon juice2 tsp
Saltto taste
Water½ cup

Method

4 steps
  1. 1Rub the fish with turmeric, salt, a little chilli and lemon and rest 15 minutes.
  2. 2Shallow fry the fish in half the oil, 2 minutes a side. Set aside.
  3. 3In the same pan, add the rest of the oil, garlic, ginger, chilli and onions and cook until soft. Add tomatoes, half the coriander and spice powders.
  4. 4Add water, slide in the fish, cover and simmer 6 to 8 minutes. Finish with amchur and the rest of the coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
