Ingredients

2 servings
Egg noodles180 g thin egg noodles
Cooking oil (vegetable oil)2 tbsp
Onion1 small, sliced
Moong sprouts (mung bean sprouts)1½ cups bean sprouts
Spring onion (green onion, scallion)3 stalks, in lengths
Soy sauce4 tsp
Dark soy sauce1 tbsp
Sugar1½ tsp
Sesame oil1 tsp

Method

5 steps
  1. 1Boil the noodles for a minute, rinse in cold water and drain very well. Spread to air dry.
  2. 2Mix both soy sauces, sugar and sesame oil.
  3. 3Heat the oil in a wok, fry the onion for a minute, then add the noodles. Spread them and let them toast.
  4. 4Pour over the sauce and toss with chopsticks until evenly brown.
  5. 5Add sprouts and spring onion, toss 30 seconds and serve.
Serve it like this

Twirl into a heap on a plate with the spring onions on top. Serve with chilli oil and a cup of hot tea.
