Ingredients

4 servings
Pasta320 g linguine
Prawns (shrimp)450 g, peeled
Olive oil3 tbsp
Garlic5 cloves, sliced
Dried red chilli1 tsp flakes, or more
Tomato puree2 tbsp tomato paste
Tomato1 can crushed tomatoes
Dried oregano1 tsp
Flat leaf parsleychopped
Saltto taste

Method

5 steps
  1. 1Season prawns with salt and a pinch of chilli and sear in half the oil until just pink. Remove.
  2. 2Add remaining oil, garlic and chilli flakes and cook gently.
  3. 3Stir in tomato paste, then tomatoes and oregano. Simmer while the pasta cooks.
  4. 4Return prawns, add drained pasta and a splash of pasta water and toss.
  5. 5Finish with parsley and serve.
Serve it like this

Twirl into warm bowls, top with the prawns and a little extra sauce, and finish with parsley and a pinch of chilli.
