Ingredients

4 servings
Masoor dal (red lentils)1 cup red lentils, rinsed
Onion1 large, chopped
Carrot1, chopped
Garlic2 cloves
Cumin powder (ground cumin)1½ tsp
Turmeric (ground turmeric)¼ tsp
Olive oil2 tbsp
Lemon juice2 tbsp, plus wedges
Saltto taste
Water5 cups

Method

4 steps
  1. 1Soften onion, carrot and garlic in the oil without browning.
  2. 2Add cumin and turmeric, stir for 30 seconds, then the lentils and water.
  3. 3Simmer until the lentils collapse completely.
  4. 4Blend smooth, loosen with hot water if needed, season and add lemon.
Serve it like this

Ladle into deep bowls, drizzle olive oil, dust cumin and serve with lemon wedges and toasted pita squares.
