Ingredients

6 servings
Basmati rice2¼ cups, soaked 2 hours
Orangepeel of 3 oranges, white pith removed, julienned
Carrot2, julienned
Almonds⅓ cup, slivered
Pistachios⅓ cup, slivered
Sugar⅓ cup
Saffrona big pinch, steeped in 3 tbsp hot water
Butter4 tbsp
Cooking oil (vegetable oil)2 tbsp
Cardamom½ tsp
Rose water1 tbsp
Saltto taste

Method

5 steps
  1. 1Blanch the orange peel in boiling water for 2 minutes, drain and repeat twice.
  2. 2Cook the peel and carrots in half the butter with the sugar and a splash of water until glossy and candied. Stir in the nuts at the end.
  3. 3Par boil the rice in plenty of salted water for 6 minutes and drain.
  4. 4Heat oil in a pot and layer rice with the candied mix and cardamom in a mound. Cover with a towel wrapped lid and steam on low.
  5. 5Mix a few spoons of rice with saffron water, rose water and the remaining melted butter, and scatter over the top.
Serve it like this

Mound on a large platter with the candied strands and nuts scattered on top. Serve with saffron chicken.
